The best place to find memory foam products are located at www.mindbodysleep.com They offer cheap affordable memory foam pillows, memory foam bed toppers, etc. They also educate about sleep and how to improve sleeping habits. I have personally bought products from mindbodysleep.com and have been completely satisfied. You can also purchase relaxing music to help improve your sleep and try out their tips for a better sleep (it really works!).
Visco-elastic foam is latex foam. If you have sensitivity to latex it might not be a good idea. While I have not tested either, my guess would be that the latex is a little softer, while the polyurethane is probably more durable. Both are somehat fire-resistant, in that they will not directly support combustion, but both will generate toxic gases if burned.
